Banana muffins and banana bread will never not be a comfort food for me. Growing up, my grandpa’s banana bread was always my favorite, and he would often send me loaves of it when I was in college—especially around finals time!
I’ve been on a muffin kick recently and as a result, my coworkers have been eating a lot of muffins. Like, every single week. Muffin Monday, anyone?
Two weeks ago I bought bananas, which meant that last Monday’s muffins had to be banana. I couldn’t decide whether people would want banana chocolate chip or banana walnut, so I just made both! I made the batter and then split it in half, adding walnuts to one half and chocolate chips to the other. All of them were eaten by 2pm so I guess both mix-ins were okay!
I mostly followed this recipe, but made a few changes, including browning the melted butter (it makes everything better!), switching up some of the spices, and adding a crumb topping.
